Method

Prepare the Prawns

  1. 1

    Marinate Prawns

In a bowl, toss the jumbo tiger prawns with olive oil, minced garlic, red chili flakes, salt, and black pepper. Let marinate for at least 15 minutes.

  2. 2

    Cook Prawns

Heat a pan over medium-high heat. Add the marinated prawns and cook for 2-3 minutes on each side until they turn opaque and slightly charred. Remove from the pan and set aside.

Make the Sauce

  1. 3

    Prepare the Sauce

In the same pan, add butter and allow it to melt. Add the canned diced tomatoes, paprika, cumin, and lime juice. Stir and simmer for about 5 minutes until the sauce thickens slightly.

  2. 4

    Combine Prawns and Sauce

Return the cooked prawns to the pan and toss to coat them in the sauce. Cook for another 2-3 minutes until heated through.

Prepare Lime Crema

  1. 5

    Mix Lime Crema

In a small bowl, mix together sour cream, lime zest, and lime juice. Set aside for drizzling later.

Prepare Garlic Focaccia

  1. 6

    Prepare Focaccia

Preheat the oven to 375°F (190°C). Mix olive oil, minced garlic, and chopped parsley in a small bowl. Brush this mixture over the focaccia bread and bake for about 10-12 minutes until golden.

Serve

  1. 7

    Plate and Serve

Serve the inferno prawns drizzled with lime crema alongside the warm garlic focaccia.
