Method

Lava Cake Directions

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in short bursts, stirring until smooth.

  2. 2

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, egg yolk, and vanilla extract until well combined and slightly frothy.

  3. 3

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously to prevent the eggs from cooking.

  4. 4

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until just combined, being careful not to overmix.

  5. 5

    Prepare Ramekins

Preheat the oven to 200°C (400°F). Grease four ramekins with butter and dust with flour to prevent sticking.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is still soft.

  8. 8

    Cool Slightly

Remove from the oven and let them cool for about 1 minute before inverting onto plates.

Chocolate Drumstick Directions

  1. 9

    Prepare Ice Cream

Scoop the ice cream into the wafer cones, filling them generously. Place them upright in the freezer for about 15 minutes to firm up.

  2. 10

    Melt Chocolate

While the ice cream firms up, melt the melting chocolate in a microwave-safe bowl or over a double boiler until smooth.

  3. 11

    Dip Cones

Remove the ice cream cones from the freezer and quickly dip the tops into the melted chocolate, allowing the excess to drip off.

  4. 12

    Add Nuts

Immediately sprinkle the chopped nuts over the chocolate-dipped tops before the chocolate sets. Return the cones to the freezer for another 10 minutes.
