    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add asparagus and mushrooms, season with salt and pepper, and sauté until tender, about 5-7 minutes.

    Mix the Chicken Salad

    In a large bowl, combine the shredded chicken, sautéed asparagus and mushrooms, and Thousand Island dressing. Mix well to combine.

    Preheat your oven to 375°F (190°C). Slice the hoagie rolls in half and place them on a baking sheet. Spoon the chicken salad mixture generously onto the rolls.
