Method

Preparation Instructions

  1. 1

    Prepare the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

  2. 2

    Add Garlic and Liquid

Stir in the minced garlic and cook for an additional 2 minutes. Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for 5 minutes.

  3. 3

    Add Broth and Seasonings

Add the beef broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

  4. 4

    Prepare for Baking

Preheat your oven to 350°F (175°C). Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls.

  5. 5

    Add Provolone and Croutons

Top each bowl with croutons and a generous layer of provolone cheese.

  6. 6

    Bake the Soup

Place the bowls on a baking sheet and bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and golden.
