Prepare the Crust
Preheat the oven to 175°C (350°F). In a mixing bowl, combine graham cracker crumbs, 50g sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Make the Cheesecake Filling
In a large bowl, beat the cream cheese until smooth. Gradually add the 200g sugar and mix until well combined. Add the sour cream, eggs, and vanilla extract. Beat on low speed until just combined; do not overmix.

Combine and Bake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for about 50-60 minutes or until the edges are set but the center is slightly jiggly.

Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
