Cooking the Base

Rinse the Quinoa
Place the quinoa in a fine-mesh strainer and rinse under cold running water for about 1-2 minutes to remove any bitterness.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

Prepare the Vegetables
While the quinoa is cooking, prepare the vegetables. Dice the bell pepper, shred the carrot, and rinse the spinach. If using fresh spinach, chop it roughly.

Heat the Chickpeas
In a skillet over medium heat, add the drained chickpeas and cook for about 5 minutes until warmed through. You can season them with a pinch of salt and pepper if desired.
