    Cook the Brown Rice

    In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the water is absorbed. Once cooked, fluff with a fork and set aside.

Cooking the Lamb and Vegetables

    Sauté the Aromatics

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Brown the Lamb

    Add 1 pound of ground lamb to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Add Vegetables and Seasoning

    Add diced carrot, chopped bell pepper, and spinach to the lamb mixture. Season with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of cumin, and 1 teaspoon of paprika. Stir well and cook for an additional 5-7 minutes until the vegetables are tender.

    Once the lamb and vegetables are fully cooked, add the cooked brown rice to the skillet. Stir everything together gently until well combined. Adjust seasoning if necessary.
