Pastry Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

    Incorporate Butter

    Cut the cold butter into small cubes and add them to the flour mixture. Use a pastry cutter or your fingertips to combine until the mixture resembles coarse crumbs.

    Add Water

    Slowly add the cold water, mixing until the dough comes together. Do not overmix.

    Chill Dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Filling

    In a large skillet, heat vegetable oil over medium heat. Add onions and garlic, sauté until softened.

    Add Pork and Vegetables

    Add the ground pork to the skillet, cook until browned. Stir in grated carrot and green peas.

    Season the Filling

    Add curry powder, fish sauce, sugar, and black pepper, mixing well. Cook for another 2-3 minutes. Remove from heat and let cool.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled pastry dough to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter).

    Fill the Pastry

    Place a tablespoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.

    Apply Egg Wash

    Brush the tops of each pastry with the beaten egg to give them a golden color when baked.

    Place the filled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
