Preparing the Chicken

    Marinate the Chicken

    In a bowl, combine the chicken breast with 2 tablespoons of soy sauce and 2 tablespoons of cornstarch. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes.

    Fry the Chicken

    In a large frying pan or wok, heat 1 cup of vegetable oil over medium-high heat. Once hot, add the marinated chicken pieces and fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken and drain on paper towels.

Making the Sweet and Sour Sauce

    Combine Ingredients

    In a saucepan, mix together 1 cup of brown sugar, 1 cup of rice vinegar, 1 tablespoon of ketchup, 2 tablespoons of soy sauce, and 1 cup of pineapple juice. Stir well to combine.

    Thicken the Sauce

    In a small bowl, mix 2 tablespoons of cornstarch with 1 cup of water until dissolved. Add this mixture to the saucepan and bring to a boil over medium heat, stirring constantly until the sauce thickens. Remove from heat.

Cooking the Vegetables

    Sauté the Vegetables

    In the same pan used for frying the chicken, add the sliced bell peppers, onion, and carrots. Stir-fry the vegetables over medium-high heat for about 5 minutes or until they are tender but still crisp.

Combining Everything

    Combine Chicken and Sauce

    Add the fried chicken back into the pan with the sautéed vegetables. Pour the sweet and sour sauce over the chicken and vegetables. Toss everything together gently until well coated and heated through, about 2-3 minutes.
