Method

Marinating the Pork

  1. 1

    Prepare the Marinade

In a bowl, mix together the olive oil, lemon juice, garlic powder, black pepper, and salt to create the marinade.

  2. 2

    Marinate the Pork

Place the pork tenderloin into a resealable plastic bag or container. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or container and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.

Cooking the Pork

  1. 3

    Cook the Pork

Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and discard the excess marinade. Cook the pork for about 6-8 minutes on each side or until the internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.

Preparing the Vegetables

  1. 4

    Chop the Vegetables

While the pork is marinating, chop the zucchini and bell pepper into bite-sized pieces.

  2. 5

    Sauté the Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped zucchini and bell pepper along with the broccoli florets. Season with salt and black pepper to taste. Sauté for about 5-7 minutes, until the vegetables are tender but still crisp.

Assembling the Bowl

  1. 6

    Combine Ingredients

In a bowl, combine the sautéed vegetables and sliced pork. Toss gently to mix.

  2. 7

    Garnish and Serve

Garnish the bowl with fresh parsley and serve with lemon wedges on the side.
