    Prepare the Ingredients

    Begin by gathering all the ingredients. Rinse the rice under cold water until the water runs clear. Dice the onion, bell pepper, and carrot into small pieces. Mince the garlic.

    Season the Chicken

    Season the chicken breasts with salt, black pepper, paprika, and dried thyme on both sides. Let it marinate for about 15 minutes.

    Cook the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the diced onion, bell pepper, carrot, and minced garlic. Sauté for about 5-6 minutes until the vegetables are softened.

    Stir in the rinsed rice, and then pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Let it simmer for about 15 minutes.
