Ingredients for Khao Neow Ma Muang
Method
Instructions
- 1
Prepare the Sticky Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight. Drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30-40 minutes, or until tender.
- 2
Make Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar dissolves. Do not let it boil. Reserve about 1/4 cup of the coconut sauce for drizzling later.
- 3
Combine Sticky Rice and Coconut Sauce
Once the rice is cooked, transfer it to a bowl and mix in the remaining coconut sauce. Let it sit for about 15 minutes to absorb the flavors.
- 4
Prepare the Mango
While the rice is resting, peel the mangoes and slice them into thin pieces.
- 5
Serve
To serve, place a portion of the sticky rice on a plate, arrange the sliced mango on the side, and drizzle with the reserved coconut sauce. Garnish with sesame seeds or mung beans if desired.
