Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, sugar, and salt. Gradually add cold water while stirring until you have a smooth batter. Let it rest for about 15 minutes.

Prepare the Bananas
Peel the ripe bananas and cut them in half lengthwise or into thick slices, depending on your preference.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Fry the Bananas
Dip the banana pieces into the batter, ensuring they are well coated, then carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 2-3 minutes per side.

Drain and Serve
Once fried, remove the bananas from the oil and place them on a paper towel to drain excess oil. Serve warm topped with scoops of coconut ice cream and sprinkle with chopped toasted coconut if desired.
