Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. 2

    Prepare the Pineapple Topping

In a small saucepan, melt 1/4 cup of butter over medium heat. Add 1 cup of brown sugar and stir until dissolved. Pour this mixture into the bottom of the prepared pan. Arrange pineapple slices over the sugar mixture and place a cherry in the center of each slice.

  3. 3

    Mix the Cake Batter

In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, cream the softened butter, then add the milk, eggs, and vanilla extract. Combine both mixtures and stir until just blended.

  4. 4

    Bake the Cake

Pour the batter over the pineapple and sugar mixture in the pan. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  5. 5

    Cool and Serve

Allow the cake to cool in the pan for about 10 minutes. Invert the cake onto a serving plate, allowing the pineapple topping to be on top. Serve warm or at room temperature.
