Filet Mignon Preparation

    Season and Grill

    Preheat the grill to high heat. Rub the filet mignon steaks with olive oil, salt, and black pepper. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from grill and let rest for 5 minutes before serving.

Potato Gratin Preparation

    Prepare and Bake

    Preheat the oven to 375°F (190°C). In a baking dish, layer the sliced potatoes. In a saucepan, heat the heavy cream, minced garlic, salt, and pepper until warmed. Pour over the potatoes and top with grated Gruyère cheese. Dot with butter. Bake for 45-50 minutes until golden and bubbly.

Haricot Vert Preparation

    Sauté

    In a skillet, heat olive oil over medium heat. Add the haricot vert and sauté for about 5-7 minutes, or until tender. Season with salt and black pepper to taste.

Bordelaise Sauce Preparation

    Make the Sauce

    In a saucepan, sauté the minced shallots in butter until translucent. Add red wine and thyme, and reduce by half. Add the beef stock and reduce further until thickened. Season with salt and black pepper to taste.
