Sauté the Spinach
In a skillet over medium heat, add the fresh spinach and sauté until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Prepare the Filling
In a large mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg until well combined. Stir in the sautéed spinach, shredded Gruyere cheese, and crumbled bacon.

Pour the filling mixture into the pre-baked pie crust, spreading it evenly. Bake for 30-35 minutes or until the quiche is set and lightly browned on top.
