    Prepare the Pork Chops

    Season the Berkshire pork chops with salt and black pepper. Let them sit for about 30 minutes at room temperature.

    Grill the Pork Chops

    Preheat the grill to medium-high heat. Brush the pork chops with olive oil and place them on the grill. Grill for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let rest for 5 minutes.

    Cook the Grits

    In a pot, bring 4 cups of water to a boil. Stir in the stoneground grits and cook according to package instructions until thickened, about 20-25 minutes. Stir in butter and season with salt to taste.

    Saute the Brussels Sprouts

    Trim and halve the Brussels sprouts. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add Brussels sprouts and cook until tender and slightly caramelized, about 8-10 minutes. Season with salt and pepper.

    Make the Mustard Creme

    In a small saucepan, heat the heavy cream over medium heat until warm. Stir in whole grain mustard and season with salt and pepper to taste. Remove from heat.

    Plate the Dish

    Spoon the grits onto each plate, top with grilled pork chop, and arrange sautéed Brussels sprouts on the side. Drizzle with mustard crème before serving.
