Soup Preparation

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent.

Add Remaining Vegetables

Stir in the diced carrots and celery, and cook for another 5 minutes until they soften. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Combine Broth and Tomatoes

Pour in the vegetable broth and add the diced tomatoes, bay leaves, and dried thyme. Stir well to combine all ingredients.

Simmer the Soup

Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-30 minutes. Stir occasionally and check for desired consistency.

Season the Soup

Remove the bay leaves and season the soup with salt and pepper to taste. Stir in the chopped fresh parsley just before serving.

Ladle the soup into bowls and serve hot with crusty bread on the side.
