Prepare the Ribeye Steak

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Rub olive oil on both sides of the steaks. Season generously with salt, black pepper, and garlic powder. Let the steaks sit at room temperature for about 30 minutes before cooking.

    Cook the Steak

    Heat a skillet over medium-high heat until hot. Place the steaks in the skillet and sear for 4-5 minutes on one side without moving them. Flip the steaks and add the sprig of fresh rosemary to the skillet. Cook for an additional 4-5 minutes for medium-rare, or adjust time to your preferred doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate, covered loosely with foil, for about 5-10 minutes before serving.

Prepare the Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into evenly sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash the potatoes until smooth and creamy. Adjust seasoning to taste.
