Slice the Ribeye
Thinly slice the ribeye steak against the grain into strips.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, bell peppers, and mushrooms. Season with salt and pepper. Cook for about 5-7 minutes, or until the vegetables are tender and slightly caramelized. Remove from the skillet and set aside.

Cook the Ribeye
In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak and cook for 3-5 minutes, stirring frequently, until browned and cooked to your desired doneness.

Combine Ingredients
Return the cooked vegetables to the skillet with the ribeye. Stir to combine and heat through for an additional 1-2 minutes.

Melt the Cheese
Place the provolone cheese slices on top of the ribeye and vegetable mixture. Cover the skillet with a lid for 1-2 minutes, allowing the cheese to melt.

Slice the hoagie rolls open and fill each roll with the ribeye and vegetable mixture. Serve hot.
