Preparation of Salmon

    Marinate the Salmon

    In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a dish and pour the marinade over them. Cover and let marinate for at least 30 minutes in the refrigerator.

    Preheat the Grill

    While the salmon is marinating, preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Salmon

    Once the grill is hot, remove the salmon from the marinade and place the fillets skin-side down on the grill. Grill for about 6-8 minutes, then carefully flip and grill for another 4-6 minutes until fish flakes easily with a fork.

    Prepare the Vegetables

    While the salmon is grilling, prepare the seasonal vegetables. Trim the ends of the asparagus, cut the bell peppers into strips, and slice the zucchini into rounds.

    Toss and Grill the Vegetables

    In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper. Grill the vegetables on a grill basket or skewers for about 5-7 minutes until tender and slightly charred.

    Serve the Dish

    Once both the salmon and vegetables are cooked, remove them from the grill. Plate the grilled salmon alongside the seasonal vegetables. Optionally, garnish with lemon wedges and fresh herbs.
