Prepare the Collard Greens

Wash the collard greens thoroughly under cold water to remove any dirt or grit. Remove the thick stems by slicing them off with a knife and then chop the leaves into bite-sized pieces.

Dice the onion and mince the garlic cloves.

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes or until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
