Prepare the Vegetables

Start by washing and drying the green cabbage and carrots. Remove the outer leaves from the cabbage and cut it into quarters. Remove the core and slice the cabbage into thin shreds. Peel the carrots and grate them using a box grater or a food processor.

Mix the Vegetables

In a large mixing bowl, combine the shredded green cabbage and grated carrots. Toss them together until evenly mixed.

Prepare the Dressing

In a separate bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, black pepper, and celery seeds. Whisk until the dressing is smooth and well-combined.

Combine Dressing and Vegetables

Pour the dressing over the cabbage and carrot mixture. Toss everything together until the vegetables are fully coated with the dressing.

Chill and Serve

Cover the coleslaw with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a side dish.
