Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust with flour. Tap out the excess flour and set aside.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Microwave in 20-second intervals, stirring in between, until melted and smooth.

  2. 4

    Mix Eggs and Sugar

In a separate bowl, whisk together the large eggs, large egg yolk, and granulated sugar until well combined and slightly frothy.

  3. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously to prevent the eggs from cooking.

  4. 6

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and salt into the mixture. Gently fold until just combined, being careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake the Cakes

Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool for 1 minute. Run a knife around the edges to loosen the cakes.

Serving

  1. 10

    Plate the Cake

Invert each ramekin onto a plate to release the cake. The molten center should flow out.

  2. 11

    Add Ice Cream

Serve immediately with a scoop of vanilla ice cream on the side.
