Cooking Pasta

Boil Water
In a large pot, bring approximately 4 liters of water to a boil. Add 1 teaspoon of salt to the water.

Cook Pasta
Once the water is boiling, add 200g of pasta. Cook according to the package instructions or until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

Drain Pasta
Once cooked, reserve 1 cup of pasta water and then drain the pasta in a colander.
Preparing Vegetables

Chop Vegetables
While the pasta is cooking, chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Zucchini and Bell Pepper
Add the chopped zucchini and bell pepper to the skillet. Sauté for about 5 minutes until they start to soften.

Add Spinach and Tomatoes
Add the cherry tomatoes and spinach to the skillet. Cook for another 2-3 minutes until the spinach wilts and the tomatoes begin to soften.
Combining and Serving

Add Marinara Sauce
Pour in the marinara sauce, Italian seasoning, and black pepper. Stir well to combine and let it simmer for about 5 minutes. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Combine Pasta and Sauce
Add the drained pasta to the skillet and toss to coat evenly with the sauce and vegetables.

Serve
Serve hot, garnished with grated Parmesan cheese if desired. Enjoy your vegetarian pasta!
