    Prepare the Pork Shoulder

    Trim excess fat from the pork shoulder and cut it into large chunks if necessary. Season generously with salt, black pepper, and cayenne pepper.

    Sauté the Onion and Garlic

    Chop the yellow onion and mince the garlic cloves. In a large skillet, heat a little oil over medium heat. Add the onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Mix the Sauce

    In a bowl, combine apple cider vinegar, brown sugar, ketchup, Worcestershire sauce, mustard powder, paprika, and water. Stir well until the sugar is dissolved.

    Combine Ingredients in Slow Cooker

    Transfer the sautéed onion and garlic to a slow cooker. Place the seasoned pork shoulder on top. Pour the sauce mixture over the pork evenly.

    Slow Cook the Pork

    Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours, until the pork is tender and easily shredded with a fork.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces.

    Return the shredded pork to the slow cooker, mix it with the sauce, and let it heat through for about 15 minutes. Serve on buns, over rice, or as desired.
