Method

Preparing the Prawns

  1. 1

    Boil the Prawns

In a large pot, bring water (1 litre) to a boil. Add salt (1 tsp) and fresh lemon juice (2 tbs).

  2. 2

    Cook the Prawns

Add the peeled and deveined prawns (500 grams) to the boiling water. Cook for 2-3 minutes or until they turn pink and opaque.

  3. 3

    Drain and Chill

Remove the prawns from the pot, drain, and place them in a bowl of ice water to stop the cooking process. Once chilled, drain again and set aside.

Making the Cocktail Sauce

  1. 4

    Combine Ingredients

In a medium bowl, mix together ketchup (1 cup), horseradish sauce (2 tbs), Worcestershire sauce (1 tbs), lemon juice (1 tbs), and Tabasco sauce (1 tsp).

  2. 5

    Adjust Seasoning

Taste the mixture and add salt to taste. Stir until well combined.

Assembling the Dish

  1. 6

    Prepare the Serving Dish

On a serving platter, lay out the lettuce leaves (4 leaves) as a bed for the prawns.

  2. 7

    Arrange the Prawns

Place the chilled prawns on top of the lettuce leaves.

  3. 8

    Serve with Sauce

Serve the prawns with the cocktail sauce on the side for dipping. Garnish with lemon wedges (2 wedges) on the platter.
