Preparing the Pork Belly Bites

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare the Pork Belly
Cut the pork belly into 1-inch cubes. Place them in a bowl and season with salt, black pepper, garlic powder, and onion powder. Toss well to ensure each piece is evenly coated.

Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork belly cubes in a single layer. Sear for about 5-7 minutes, turning occasionally until they are browned on all sides.

Bake the Pork Belly
Transfer the skillet to the preheated oven and bake for 2 hours, or until the pork belly is tender and crispy.
Making the Spicy Apricot Glaze

Combine Ingredients
In a small saucepan, combine apricot preserves, Sriracha sauce, soy sauce, apple cider vinegar, and minced garlic.

Simmer the Glaze
Heat the saucepan over medium heat. Stir occasionally until the mixture comes to a simmer and the apricot preserves have melted and combined with the other ingredients, about 5-7 minutes.

Adjust Seasoning
Taste the glaze and adjust the spiciness or sweetness if needed by adding more Sriracha or apricot preserves.
Serving

Glaze the Pork Belly Bites
Once the pork belly is cooked, remove it from the oven and drizzle the spicy apricot glaze over the bites. Toss gently to coat each piece.
