    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water.

    Blend Ingredients

    In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin, salt, and water. Blend until smooth.

    Adjust Consistency

    If the hummus is too thick, add additional water, one tablespoon at a time, until you reach your desired consistency.

    Serve

    Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika.

Baba Ganoush

    Roast the Eggplant

    Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and place it on a baking sheet. Roast for 30-40 minutes until the skin is charred and the flesh is soft.

    Cool and Scoop

    Once the eggplant is roasted, let it cool for a few minutes, then scoop out the flesh into a food processor.

    Blend Ingredients

    Add tahini, lemon juice, garlic, olive oil, and salt to the eggplant in the food processor. Blend until smooth.

    Transfer the baba ganoush to a serving dish, drizzle with olive oil, and sprinkle with smoked paprika.

    Transfer the mixed olives to a small serving bowl, ready for presentation.

    If desired, warm the pita bread in the oven for 5-10 minutes before serving.
