Preparing the Chicken

    Marinate the Chicken

    In a bowl, combine 2 tablespoons of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder. Add the chicken breasts and coat them well with the marinade. Let it sit for at least 15 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Place the marinated chicken breasts on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest before slicing.

Making the Salad

    Prepare the Salad Base

    In a large bowl, add 4 cups of mixed greens and 1 cup of halved cherry tomatoes. Toss gently to mix.

    Slice the Chicken

    Once the grilled chicken has rested, slice it into strips and add it to the salad mixture.

Preparing the Balsamic Vinaigrette

    Mix the Vinaigrette

    In a small bowl, whisk together 3 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey. Season with salt and black pepper to taste.

Assembling the Salad

    Drizzle the balsamic vinaigrette over the salad and toss gently to combine all ingredients.
