Method

Prepare Chicken

  1. 1

    Marinate the Chicken

In a bowl, combine the boneless chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper. Ensure the chicken is well coated. Cover and let it marinate for at least 30 minutes in the refrigerator.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high heat. Once hot, place the marinated chicken on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before serving.

Prepare Vegetables

  1. 3

    Chop and Season the Vegetables

While the chicken is marinating, chop the zucchini, bell peppers, and carrots into bite-sized pieces. In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

  2. 4

    Grill the Vegetables

Once the chicken is done, place the seasoned vegetables on the grill. Grill for about 5-6 minutes, turning occasionally, until they are tender and slightly charred.

Prepare Gravy

  1. 5

    Make the Roux

In a saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour and whisk constantly for about 2 minutes until it turns light golden brown.

  2. 6

    Add Chicken Broth

Slowly add the chicken broth to the roux while whisking to prevent lumps. Continue to cook for about 5 minutes or until the gravy thickens. Season with salt and black pepper to taste.
