Grilled Cheese

    Prepare the Bread

    Take the sourdough bread slices and lay them out on a clean surface.

    Add Cheese

    Place a slice of cheddar cheese on two of the bread slices.

    Assemble the Sandwiches

    Top the cheese with the other two slices of bread to form two sandwiches.

    Butter the Bread

    Spread butter on the outer sides of each sandwich.

    Grill the Sandwiches

    Heat a skillet over medium heat. Place the sandwiches in the skillet, cooking for 3-4 minutes on each side until golden brown and the cheese is melted.

Tomato Soup

    Sauté Vegetables

    In a medium saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes (with juice) and vegetable broth. Bring to a simmer.

    Season the Soup

    Add salt, black pepper, and basil to the soup. Stir well and let it simmer for 15 minutes to allow the flavors to meld.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches.

    Serve Warm

    Serve the hot tomato soup in bowls alongside the grilled cheese sandwiches.
