Making the Doughnuts

Prepare the Dough
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.

Combine Wet Ingredients
In a separate bowl, whisk the whole milk, eggs, vanilla extract, and melted unsalted butter until fully combined.

Mix Dough
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; the dough should be slightly sticky.

Shape the Doughnuts
On a floured surface, roll out the dough to about 1/2 inch thick. Use a doughnut cutter to cut out doughnuts and holes. Gather scraps and reroll as necessary.

Fry the Doughnuts
Carefully place the doughnuts into the hot oil, frying several at a time without overcrowding. Fry for about 1-2 minutes on each side, or until golden brown.

Drain and Cool
Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly before coating.
Coating and Glazing

In a small bowl, mix together the granulated sugar and ground cinnamon. While the doughnuts are still warm, roll them in the cinnamon sugar mixture to coat evenly.

Glaze the Doughnuts
Dip the tops of the cooled doughnuts into the vanilla glaze, allowing excess glaze to drip off. Place on a wire rack to set for about 10 minutes.
