Method

Crust Preparation

  1. 1

    Mix Crust Ingredients

In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

  2. 2

    Press into Pan

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup or your fingers to pack it down.

  3. 3

    Bake

Preheat your oven to 350°F (175°C). Bake the crust for 10 minutes until slightly golden. Remove from oven and let it cool completely.

Filling Preparation

  1. 4

    Beat Cream Cheese

In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer.

  2. 5

    Add Sugar and Vanilla

Gradually add the powdered sugar and vanilla extract to the cream cheese, mixing until well combined.

  3. 6

    Whip Heavy Cream

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.

  4. 7

    Fill the Crust

Pour the cream cheese filling into the cooled crust, spreading it evenly. Cover and refrigerate for at least 4 hours, or until set.

Topping Preparation

  1. 8

    Prepare Strawberries

Wash and slice the fresh strawberries. Set aside.

  2. 9

    Mix with Honey

In a small bowl, combine the sliced strawberries with honey and let them macerate for about 15 minutes.

  3. 10

    Garnish Cheesecake

Once the cheesecake is set, remove it from the refrigerator and top with the honeyed strawberries and fresh mint leaves before serving.
