Spicy Marinara Sauce

Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water and remove the fins and insides. Cut the squid into rings, about 1/2 inch thick.

Marinate the Calamari
In a bowl, add the cleaned calamari and pour in the buttermilk. Allow it to marinate for at least 30 minutes in the refrigerator.

Prepare the Breading
In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, smoked paprika, and garlic powder. Mix well.
Frying the Calamari

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 375°F (190°C).

Bread the Calamari
Remove the calamari from the buttermilk marinade and let excess liquid drip off. Dredge each ring in the flour mixture, ensuring they are well-coated.

Fry the Calamari
Carefully place the breaded calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

Drain Excess Oil
Using a slotted spoon, remove the calamari from the oil and transfer to a plate lined with paper towels to drain excess oil.
Making the Spicy Marinara Sauce

Add Tomatoes and Spices
Add the canned crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper to the saucepan. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally. Stir in the chopped fresh basil before serving.

Serve the crispy calamari hot on a platter with the spicy marinara sauce on the side for dipping.
