Prepare the Cheesecake Base

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Mix the Crust Ingredients

    In a mixing bowl, combine the graham cracker crumbs, 0.5 cups of granulated sugar, melted butter, and salt. Mix until well combined.

    Form the Crust

    Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Prepare the Cheesecake Filling

    Mix the Cream Cheese

    In a large mixing bowl, beat the softened cream cheese until smooth.

    Add Remaining Ingredients

    Add 1 cup of granulated sugar, sour cream, vanilla extract, and flour to the cream cheese. Mix until well combined.

    Incorporate Eggs

    Add eggs one at a time, mixing on low speed after each addition until fully incorporated.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan.

    Bake the Cheesecake

    Bake in the preheated oven for 55-60 minutes or until the edges are set but the center is still slightly jiggly.

    Cool the Cheesecake

    Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour to prevent cracking. Then refrigerate for at least 4 hours or overnight.

Prepare the Berry Compote

    In a medium saucepan, combine the mixed berries, 0.25 cups of sugar, and lemon juice.

    Cook over medium heat, stirring occasionally, until the berries are softened and the mixture has thickened, about 10-15 minutes.

    Remove from heat and let cool to room temperature before serving.
