Prepare the Wings

Clean and Season the Wings
Rinse the chicken wings under cold water and pat dry with paper towels. In a large bowl, season the wings with salt and black pepper.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Wings
Carefully add the wings to the hot oil in batches, frying for about 8-10 minutes or until they are golden brown and cooked through. Use a slotted spoon to transfer the wings to a paper towel-lined plate to drain excess oil.
Make the Buffalo Sauce

Melt the Butter
In a saucepan over low heat, melt the unsalted butter.

Add Hot Sauce and Spices
Once the butter is melted, stir in the hot sauce, garlic powder, paprika, and cayenne pepper. Mix well and simmer for 2-3 minutes until heated through.
Prepare the Blue Cheese Dressing

Combine Ingredients
In a mixing bowl, combine the mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, salt, and black pepper.

Using a whisk or fork, mix all the ingredients until well combined. Adjust seasoning to taste.
Toss the Wings

Coat the Wings
In a large bowl, toss the fried wings with the buffalo sauce until they are well coated.
Serve

Serve the buffalo wings hot with the blue cheese dressing on the side for dipping.
