Preheat the Oven
Preheat your oven to 450°F (230°C).

Prepare Cauliflower
Remove the leaves from the cauliflower and cut it into bite-sized florets.

Season the Cauliflower
In a large bowl, toss the cauliflower florets with olive oil, salt, garlic powder, and onion powder until evenly coated.

Make the Buffalo Sauce
In a small saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce and mix thoroughly until combined.
Baking and Serving

Bake the Cauliflower
Spread the seasoned cauliflower florets on a baking sheet lined with parchment paper in a single layer. Bake in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through.

Toss with Buffalo Sauce
Once the cauliflower is baked, remove it from the oven and transfer it to a large bowl. Pour the hot buffalo sauce over the cauliflower and toss until evenly coated.

Serve the buffalo cauliflower hot with celery sticks and blue cheese dressing on the side. Sprinkle blue cheese crumbles over the top if desired.
