Prepare the Sausage

In a large pot, heat the olive oil over medium heat. Add the andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

Sauté the Vegetables

In the same pot, add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.

Add Tomatoes and Broth

Stir in the diced tomatoes and cook for another 2 minutes. Then, pour in the chicken broth and bring to a boil.

Season the Gumbo

Add the Cajun seasoning, bay leaves, and the cooked sausage back into the pot. Reduce the heat and let it simmer for 20 minutes.

Add Seafood

After 20 minutes, add the shrimp, crab meat, and oysters to the gumbo. Simmer for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Final Seasoning

Taste the gumbo and season with salt and black pepper to your liking. Remove the bay leaves before serving.

Serve the gumbo over a scoop of cooked rice and garnish with chopped green onions.
