Melt the Chocolate
Chop the dark chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Reserve a portion for topping the mousse later.

Combine Egg Yolks and Sugar
Add the granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

Mix in Chocolate
Gradually fold the melted chocolate into the egg yolk mixture until well combined.

Beat Egg Whites
Add a pinch of salt to the egg whites and beat until stiff peaks form.

Fold in Egg Whites
Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Combine with Whipped Cream
Fold in the whipped cream until fully incorporated and the mousse is smooth.

Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.
