Prepare the crust
Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from oven and let cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the remaining 3/4 cup of granulated sugar, mixing until well combined. Add sour cream and vanilla extract; mix until smooth. Add eggs one at a time, mixing on low speed until just combined.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Cool and chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

Serve with strawberries
Before serving, wash and slice fresh strawberries. Top the cheesecake with sliced strawberries just before serving. Enjoy!
