    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut the Russet potatoes into thin strips and soak them in cold water for at least 30 minutes. Drain and pat dry.

    Season and Bake

    In a large bowl, toss the dried potato strips with truffle oil, salt, and pepper. Spread them in a single layer on a baking sheet and bake for about 25-30 minutes or until golden and crispy, flipping halfway through.

    Garnish

    Once baked, remove the fries from the oven and sprinkle with fresh parsley.

    Prepare the Gouda Dipping Sauce

    In a saucepan over medium heat, combine the heavy cream and garlic powder. Stir until hot but not boiling. Gradually add the shredded Gouda cheese, stirring until melted and smooth. Season with salt and black pepper to taste.

    Serve the truffle fries hot with the Gouda dipping sauce on the side.
