Prepare the Lobster Tails
Using kitchen scissors, carefully cut the top shell of the lobster tails down the middle, stopping just before the tail fin.
Extract the Meat
Gently pull the lobster meat out of the shell, keeping it attached at the base. Lay the meat on top of the shell.
