Prepare the Goat Cheese
Slice the goat cheese log into 1/2 inch rounds and place them in the freezer for about 15 minutes to firm up.

Fry the Cheese
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded goat cheese rounds and fry for about 2-3 minutes on each side until golden brown. Remove and place on paper towels to drain excess oil.

Make the Vinaigrette
In a small bowl, whisk together sriracha, fresh orange juice, honey, salt, and black pepper until well combined.

Assemble the Dish
On a plate, arrange a bed of arugula. Top with the fried goat cheese rounds and drizzle with the sriracha-citrus vinaigrette before serving.
