    Prepare the Glaze

    In a saucepan over medium heat, combine apple cider, maple syrup, fresh rosemary, and Dijon mustard. Bring to a simmer and cook until thickened, about 10 minutes. Remove from heat and set aside.

    Prepare the Pork Chops

    Pat the Berkshire pork chops dry with a paper towel. Rub both sides with olive oil, salt, and black pepper.

    Sear the Pork Chops

    Heat a large skillet over medium-high heat. Once hot, add the pork chops and cook for 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C).

    Glaze the Pork Chops

    In the last minute of cooking, brush the prepared glaze over the pork chops. Allow them to caramelize slightly.

    Serve

    Remove the pork chops from the skillet and let them rest for 5 minutes. Serve with additional glaze if desired.
