1. Cook the Stringozzi
Bring a large pot of salted water to a boil. Add the stringozzi pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.
2. Make the Lamb Sugo
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, grated carrot, and chopped celery. Sauté until the vegetables are softened, about 5-7 minutes.
3. Brown the Lamb
Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon, about 8-10 minutes.
4. Deglaze the Pan
Pour in the red wine, scraping the bottom of the pan to release any browned bits. Allow to simmer for 2-3 minutes until slightly reduced.
5. Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
6. Combine Pasta and Sauce
Add the cooked stringozzi to the sauce. If the sauce is too thick, add a little reserved pasta cooking water to reach desired consistency. Toss to combine.
7. Serve
Serve the stringozzi with lamb sugo topped with grated Parmesan cheese and fresh basil.
