Finely chop the beef tenderloin using a sharp knife. Ensure it is minced to your desired texture, but do not puree it.

In a mixing bowl, combine the chopped beef, egg yolk, Dijon mustard, Worcestershire sauce, shallots, capers, cornichons, and parsley. Mix until well combined.

Drizzle olive oil over the mixture and season with salt and freshly ground black pepper to taste. Mix again to incorporate.
