Dough and Filling

Method

Preparation and Cooking

  1. 1

    Make the Dough

In a large bowl, combine the flour and salt. Gradually add the water, mixing until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

  2. 2

    Prepare the Filling

In a separate bowl, mix together the ground meat, chopped onion, minced garlic, chopped cilantro, black pepper, and salt. Gradually add the water to the mixture, stirring until well combined and slightly moist.

  3. 3

    Shape the Khinkali

Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle (about 4-5 inches in diameter). Place a spoonful of filling in the center of each dough circle. Gather the edges of the dough and pinch them together to form a pouch, twisting at the top to seal.

  4. 4

    Cook the Dumplings

Bring a large pot of salted water to a boil. Carefully drop the khinkali into the boiling water, ensuring not to overcrowd the pot. Cook for about 10-12 minutes or until they float to the surface and are cooked through.

  5. 5

    Serve

Remove the khinkali with a slotted spoon and serve hot, with additional black pepper sprinkled on top.
