Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

Dry the Potatoes
Drain the potatoes and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a batch of the dried potato sticks to the hot oil. Fry them for about 5-7 minutes or until golden brown. Avoid overcrowding the pot.

Remove the fries from the oil and drain them on paper towels. Immediately sprinkle with salt and pepper to taste.
