Warm the dairy
In a medium saucepan, combine whole milk, heavy cream, and half of the granulated sugar (1/2 cup). Split the vanilla bean lengthwise, scrape the seeds into the milk mixture and add the pod (or add 1 tablespoon pure vanilla extract later). Warm the mixture over medium heat until it is steaming and small bubbles form at the edge, about 5–7 minutes. Do not boil. Remove from heat and let steep for 10 minutes to infuse vanilla.

Whisk yolks and sugar
While the milk is steeping, whisk the egg yolks with the remaining 1/2 cup granulated sugar and the salt in a medium bowl until the mixture is pale and slightly thickened, about 2–3 minutes.

Cook the custard
Return the tempered mixture to the saucepan and cook over low–medium heat, stirring constantly with a wooden spoon or heatproof spatula, scraping the bottom. Cook until the custard thickens enough to coat the back of the spoon and reaches about 170–175°F (77–80°C), about 4–6 minutes. Do not let it boil.

Strain and chill
Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits and any remaining vanilla pod. If you used vanilla extract instead of a pod, stir it in now. Cover the surface directly with plastic wrap to prevent a skin from forming and cool to room temperature, then refrigerate until thoroughly chilled, at least 2 hours (or up to overnight).

Make the oat crunch
Preheat oven to 350°F (175°C). On a small baking sheet, melt the butter in a heatproof bowl or directly in a small saucepan, then stir in the brown sugar, rolled oats, cinnamon, nutmeg, and 1/4 teaspoon salt until evenly coated. Spread the mixture into a single thin layer and bake for 8–10 minutes, tossing once halfway, until golden and fragrant. Watch carefully so the oats don't burn.

Finish the crunch
Remove from oven and stir in the toasted sliced almonds (or chopped walnuts). Let the oat crunch cool completely on the baking sheet — it will crisp further as it cools. Break into small clusters for serving.

Macereate the berries
In a small bowl, toss the quartered strawberries (or raspberries) with the lemon juice and honey (or superfine sugar). Let sit at room temperature for 10–15 minutes so the berries release their juices and become glossy but still hold shape. Stir gently before layering.

If you prefer a lighter texture for the nostalgic custard, whip 1/2 cup (120 ml) cold heavy cream to soft peaks and gently fold about 1 cup of the chilled custard base into the whipped cream to create a light mousse. (If you prefer a dense, old-fashioned custard, skip this step and use the custard as-is.)

Layer the dessert
Divide the chilled custard (or custard-mousse) among 6 small serving glasses or ramekins (about 1/2 cup each). Spoon a layer of the macerated berries (about 2 tablespoons) over the custard in each glass. Sprinkle a generous tablespoon of the oat crunch over the berries to create texture and nostalgia.

Garnish and serve
Finish each serving with a small sprinkle of microplaned lemon zest and a mint leaf for brightness. Serve immediately so the oat crunch stays crisp. If not serving right away, keep chilled and add oat crunch just before serving.
